Vietnamese Spring Rolls with Lemongrass Chicken

Compliment your Vietnamese Spring Rolls with a classic Lemongrass Chicken. Feed your family a gourmet meal with this easy recipe!

Ingredients:

  • 1 pkg SUMM! Vietnamese Spring Rolls
  • 4 chicken thighs, boneless
  • 1 stalk lemongrass, white part only sliced
  • 2 garlic cloves, minced
  • 2 Tbsp lime juice
  • 2 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • 1 Tbsp vegetable oil

Directions:

  1. Combine the lemongrass, garlic, lime juice, fish and soy sauce and sugar in a medium bowl. Add the chicken and marinate for a least 1 hour or more.
  2. Heat the oil in a cast iron pan or the BBQ. Grill the chicken until dark brown, about 6-8 minutes. Remove from the pan and reserve.
  3. Prepare spring rolls according to package directions and serve with grilled chicken, rice or rice noodles and garnish with sliced cucumbers, carrots and cilantro.
