Spring Roll Nachos with Pico de Gallo

Baking SUMM! Spring Rolls with cheese and your favorite toppings are a great way to feed a crowd! Next time you are entertaining, try this easy recipe!

Ingredients

  • 1 pkg SUMM! Spring Rolls
  • 2-3 medium tomatoes, small diced
  • 1/2 small red onion, small diced
  • 1 jalapeno pepper, seeded and minced
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • Salt & Pepper to taste
  • 2 cups shredded cheddar and or jack cheese

Directions

  1. Preheat oven to roast at 425°F or 220°C.
  2. On a lined sheet pan or in an oven proof cast iron pan, arrange spring rolls and bake for 8 minutes until brown and crispy.
  3. Remove from oven and cover with shredded cheese and return to oven and bake for another 5-8 minutes or until cheese is melted.
  4. Meanwhile, combine tomatoes, red onion, jalapeno, lime and cilantro in a small bowl to make your Pico de Gallo.
  5. Remove spring rolls from oven and garnish with Pico de Gallo. Serve with your favourite nacho accompaniments.
