Pork Lumpia Vermicelli Salad

Perfect for a quick and easy summer meal! Fresh, delicious, and healthy. Make it with the SUMM! Pork Lumpia.

Ingredients

  • 1 pkg Summ! Lumpia 
  • 1 cup prepared vermicelli rice stick 
  • 1 small zuchinni, julienned 
  • 1 small carrot, julienned 
  • ½ small red onion, thinly sliced 
  • 4-5 baby red peppers, sliced 
  • 2 Tbsp canola oil 
  • ½ block firm tofu, cubed 
  • 2 Tbsp soy sauce 
  • 1 Tbsp siracha chili sauce 
  • 2 Tbsp green onion, sliced 
  • ¼ cup roasted unsalted peanuts, roughly chopped 
  • Lime wedges 
  • Mint 

Directions

  1. Prepare Summ! Lumpia according to package directions.
  2. In a small bowl mix together the soy sauce, siracha and the cubed tofu.
  3. Heat the oil in a small pan and sear the tofu. Reserve. Divide the vermicelli, zucchini, carrots, red onion and peppers between two plates.
  4. Top with the reserved tofu and lumpia.
  5. Drizzle with Summ! dipping sauce and garnish with green onion, peanuts, mint and lime.
  6. Enjoy!
