Grilled Spring Rolls & Veggie Skewers

Perfect for a quick and easy summer meal which doesn't heat up your kitchen! Try our spring rolls on the BBQ!

Ingredients

  • 1 Pkg SUMM! Pork Spring Rolls
  • 1 zucchini, large slices
  • 1 red pepper, large pieces
  • 2 cups pineapple chunks
  • 1/2 red onion, quartered
  • Olive oil
  • Chili salt (optional)
  • 4 bamboo skewers, presoaked in water or metal skewers

Directions

  1. Preheat BBQ grill to high.
  2. Meanwhile, thread skewers with zucchini, pineapple, red pepper, and red onion.  Brush or spray with some olive oil and sprinkle with chili salt if using.
  3. Place spring rolls on the grill along with the veggie skewers and turn after about 3-5 minutes.  Grill for another 5 minutes or until spring rolls are crispy and veggie skewers are roasted.
  4. Enjoy with SUMM! Plum sauce!
