Easy Crunchy Thai Slaw

Ingredients

  • 1/2 pack of SUMM! Red Curry Chicken Spring Rolls
  • 1 bag of shredded cabbage
  • 1 cup of sliced cucumber
  • 1/2 cup of thinly sliced radish
  • 1/3 cup whole cilantro leaves
  • 1/4 cup sliced green onion

Dressing

  • 2 packets of SUMM! sweet chili sauce *included
  • 2 tbsp sesame oil
  • 2 tbsp fish sauce
  • 1/2 squeezed lime

Directions

  1. Preheat air fryer to 390°F (199°C). For oven baking see package instructions.
  2. Place Spring Rolls into air fryer basket in a single layer and heat for 8-10 minutes or until crispy, shake or toss once during heating.
  3. Remove from air fryer and let it cool.
  4. In a large bowl combine cabbage, cucumber, radish, green onion, and cilantro.
  5. For the dressing, mix together the sweet chili sauce, lime, and fish sauce. Pour on top of the salad and toss.
  6. Serve with Red Curry Spring Rolls and Enjoy!
