Classic Chicken Adobo and Rice

Ingredients:

  • 1 package SUMM! Chicken Lumpia
  • ½ cup Filipino sugarcane vinegar
  • ½ cup soy sauce
  • 8 cloves garlic, minced
  • ½ tsp black peppercorns
  • 1 large bay leaf
  • ¼ cup brown sugar
  • 8 boneless skinless chicken thighs
  • 1 Tbsp canola oil
  • Green scallions for garnish, chopped
  • Chili flakes as garnish (optional)

Directions:

  1. Marinade: In a medium sized container, combine the vinegar, soy sauce, garlic, peppercorns, bay leaf, and sugar. Stir until sugar dissolves. Add the chicken thighs and turn to coat well with marinade. Cover the container and let stand for 20 mins.
  2. Preheat the oven to 400 degrees. Prepare SUMM! Lumpia according to package directions for a conventional oven.
  3. Meanwhile, heat an ovenproof skillet on high heat. Sear chicken thighs, draining as much marinade as possible, 4 at a time, so as not to crowd the pan, and reserve on a plate.
  4. Turn the heat down to medium high and add all the reserved marinade liquid. Return the chicken to the pan and place the pan in the oven to finish cooking. About 10 minutes.
  5. Serve chicken adobo with crispy lumpia garnished with scallions and steamed rice.
