INGREDIENTS:

  • 2 – 4 SUMM! Crispy Pork spring rolls
  • 1 medium carrot, grated
  • 1 cup daikon radish, grated
  • 1 cup red onion, thinly sliced
  • Pinch of salt
  • 2 tsp sugar
  • 1 cup white vinegar
  • 1 cup water
  • ¼ cup mayonnaise (preferably Kewpie)
  • 2 hot dog buns
  • 1 small cucumber, sliced
  • Cilantro
  • Scallions

 

DIRECTIONS:

  1. In a medium container, add the grated carrot, radish and red onion.
  2. Season with salt and sugar. Pour in the vinegar and water and give a little stir.
  3. Allow to pickle for minimum 1 hr. Pour out the liquid and reserve.
  4. Heat spring rolls on a grill or in cast iron skillet. Once heated, slice the rolls into chunks or leave whole.
  5. Dress your hot dog buns with mayonnaise, the pickled vegetables, sliced cucumber , cilantro, scallions and your prepared spring rolls.
  6. Drizzle with SUMM! sauce and enjoy!
