Apple Pie Roll Crisp

Ingredients

  • 1 package SUMM! Apple Pie Spring Rolls⁠

Apple Butter

  • 6 Macintosh or Gala Apples
  • ½ cup of water⁠
  • 1 TBSP apple cider vinegar or squeeze or lemon juice⁠
  • 1 TBSP cinnamon⁠
  • ½ TSP allspice (optional)⁠
  • ½ TSP nutmeg (optional)⁠
  • Pinch of salt⁠
  • 3/4 cup packed brown sugar

Crumble Topping

  • ½ cup butter, cold and cut into chunks
  • ½ cup quick rolled oats
  • 1 cup all purpose flour
  • ¼ cup packed brown sugar
  • 2 Tbsp pumpkin seeds
  • ¼ cup pecans, chopped
  • 2 Tbsp sliced almonds

Cooking Instructions

  • Peel and core apples then chop into small chunks.
  • Add apples to a medium sized pot along with ½ cup of water or just enough to barely cover the apples.
  • Place over high heat and bring to a boil then reduce to a simmer for about 15 minutes until apples start to break down.
  • Add the rest of the ingredients to the pot, stir to combine.
  • Keep at a low simmer for 1 hour, stirring occasionally, until apples have broken down completely and the sauce has reduced to a deep brown thickened consistency.
  • Remove from heat, cool to room temp and reserve.
  • Meanwhile, in a medium bowl combine the butter, oats, flour, sugar, pumpkin seeds, pecans and almonds.
  • With a fork or your hands, cream together ingredients until you have a lumpy, crumbly texture.
  • Reserve in the refrigerator until ready to use.
  • Preheat oven to 375
  • Prepare apple pie rolls following package directions.
  • In a small baking dish, spoon in 1 cup of the reserved apple butter.
  • Place the apple pie rolls over top and spoon over another ½ cup of apple butter.
  • Cover with reserved crumble topping.
  • Bake in a 375 oven for about 20 minutes or until topping is golden brown and crumble is warmed through.
  • Serve with SUMM! Caramel Sauce
