Veggie Spring Rolls Cups with Sweet Bell Pepper Relish

Ingredients

  • 1 ½ cups mixed red and yellow bell peppers, small dice 
  • ½ cup white onion, diced 
  • 2 small ribs of celery, diced 
  • 1 cup apple cider vinegar 
  • ¾ cup sugar 
  • ½ tsp mustard seed, whole 
  • ¼ tsp coriander seed, whole 

Instructions

  • Over high heat, in a medium pot, bring the cider vinegar, sugar and spices to a boil.
  • Reduce heat to simmer for about 5 minutes or until sugar is dissolved.
  • Add the diced peppers and onions and continue to simmer for 15 – 20 minutes.
  • Remove from heat and let cool.
  • Relish is ready to serve right away or keep in a covered container in the fridge for at least 24 hours prior to serving for best flavor. 
  • Hot Tip! Mix the packet of SUMM! Plum dipping sauce with the relish for added sweetness
