Spring Roll Taquitos

Looking for a little Mexican flair to spice up your meal? Try these cheesy taquitos for a fun meal to share with your friends and family!

Ingredients

  • 1 pkg SUMM! Chicken Spring Rolls
  • 1 tsp ground chilli pepper
  • Favorite tomato salsa
  • 1 avocado
  • 1 lime, juiced
  • 1/4 tsp salt
  • 2 Tbsp crumbled goat cheese
  • 1 small red onion, sliced
  • 1 Tbsp apple cider vinegar

 

Directions

  1. Preheat oven to roast at 425°F or 220°C.
  2. Place a wired cooling rack on top of a baking sheet and arrange spring rolls with room in between. Sprinkle evenly with chilli powder. Roast in the oven for 8-10 minutes until crisp and browned.
  3. Meanwhile, in a blender, blend avocado and lime until smooth. Reserve.
  4. In a small bowl, mix together sliced red onion, cider vinegar, and let sit until softened and onions turn pink. Reserve.
  5. Arrange heated spring rolls on a platter and garnish with avocado cream, salsa, pickled onions and goat cheese.
