Strawberry Pie Ice Cream Cake

Happy 4th of July! Grab a pack of SUMM! Strawberry Apple Pie Rolls and make this delicious Strawberry Apple Pie Ice Cream Cake for your next party.

INGREDIENTS:

  • 8 SUMM! Strawberry Apple spring rolls (more if using larger round)
  • 1 cup graham cracker crumbs
  • ¼ cup melted butter
  • 750ml large container of your favourite vanilla ice cream
  • 750 ml large container of your favourite strawberry ice cream
  • 1 cup fresh strawberries, cut into quarters
  • Whipped cream for garnish

DIRECTIONS:

  1. Prepare SUMM! Strawberry Apple Pie Rolls as per package directions. Cut in half lengthwise and let cool. Meanwhile, line a 6” spring form pan with parchment paper. Combine the graham cracker crumbs and melted butter and press into the base of the pan.
  2. Place the pan in the freezer. Remove the ice cream from the freezer and allow it to soften at room temperature for about 10 minutes or until it is soft enough to spread.
  3. Take the pan from the freezer and line the sides with the spring rolls. Scoop in some strawberry ice cream and spread to fit the base. Swirl in some vanilla and continue layering.
  4. Place the pan back in the freezer to firm up for at least 1 hour.
  5. Unmould the cake. Decorate with whip cream and cut strawberries.
