Red Thai Curry Dumpling Soup

Ingredients

  • 1 pack of SUMM! Vegetable Gyoza Dumplings
  • 2 heaping tsp red Thai curry paste
  • 1 tbsp canola oil
  • 3/4 cup coconut milk
  • 1 1/2 cup vegetable broth or chicken broth
  • 2 tsp fish sauce
  • Salt (to taste)
  • 1 tsp sugar (to taste)
  • 3 heads of bok choy
  • 1 green onion
  • Optional: fried garlic – as much as you like!

Directions

  1. Add oil to a pot and saute the Red Thai curry paste
  2. Add in your coconut milk, broth, fish sauce, salt, sugar
  3. Bring the broth to a boil and add in gyozas. Cover and heat on medium high for 5 minutes.
  4. Add your bok choy and steam bok choy.
  5. Add to a bowl and garnish with green onions and fried garlic.
