Pork Lumpia with Pancit Bihon

Pork Lumpia with Pancit Bihon are Filipino cuisine classics! Try this power combination for the perfect meal and impress your guests with this feast!

Ingredients:

  • 1 package of Pork Lumpia
  • 1 package rice vermicelli, soaked in water
  • 1 Tbsp vegetable oil
  • 2 cups mixed veggies, sliced celery, carrots, cabbage, snap peas
  • ½ cup cooked chicken, sliced
  • ¼ cup scallions, sliced
  • ½ onion, sliced
  • 4 cloves garlic, minced
  • 1 Tbsp soy sauce
  • 1 chicken bouillon cube
  • 3-4 cups water

Directions:

  1. Combine the water, bouillon cube and soy sauce in a large measuring cup and set aside.
  2. In a wok or large skillet, heat the oil over high heat. Add the veggies, chicken, scallions, onion, garlic and stir-fry for about a minute.
  3. Add the vermicelli noodles to the wok and pour over most of the reserved stock. Stir and allow to cook until most of the liquid has been absorbed and noodles have softened.
  4. Add more stock as needed.
  5. Serve with crispy Pork Lumpia.
